This is a great side dish. It is not only healthy but it can be served hot or cold.

1 cup quinoa (preferably lighter looking one)
1 sweet potato
800 grams frozen broccoli
400 grams frozen baby carrots
garlic powder (approx 2 tbs)
black pepper (approx 1/2 tsp)
salt (approx 1/2 tsp)
Note: you can use fresh veggies, you can add other veggies like frozen green or yellow beans.
Saute diced onion in a little bit of olive oil. When browned add in spices and quinoa and mix.
Cover quinoa with water and then add a bit more water. Add the sliced or diced sweet potato on top of the quinoa. Make sure the water more or less covers it all. Cover and lower flame.
Cook for 10-20 minutes until the water is evaporated and the sweet potato is soft.
In the meantime put the veggies into a big pan and roast in the oven with some garlic powder and olive oil.
When both the quinoa and sweet potato and the roasted veggies are done, mix them together oin a big bowl.
Makes a very generous amount of quinoa! Can be kept in the refrigerator for a few days without a problem. It can be served hot or cold.
